Buy one butt, cut it in half OR once it hits 160 internal temp, wrap it and it will power through the stall and finish quicker. When it hits 190° internal, take it out of the foil (just open the foil) and let it ride until 195ish. This will firm up the bark a little.

Burgers and dogs today. Burgers were awesome. Dogs were "meh." Is just as soon do dogs on a gasser. Obligatory pics.

Nuttin' wrong with burgers and dogs. I am not a huge hotdog fan but let me tell you this. You NEED to acquire some Sahlens hot dogs. They're out of Buffalo and they're awesome. I went to a get together of fellow bbq enthusiasts and one of the guys there (a Buffalo native) had a few packs, grilled them up and they were AWESOME! I found some at a place in Marietta and had to buy a 5# package but I got them! I broke the package apart and vacuum sealed them into packages with 4 each in them and froze them. Ramen smoked a brisket on the electric smoker today. It turned out very nice.

Very nice. The more popular brisket has become, the higher the price! I remember when you could buy it for $1.75 a pound or less! I buy CAB choice and it costs me $3.75/lb. Not cheap anymore! Compared to steak it's cheap but when you buy a 17 pounder, it adds up quick.
I am glad you fellas are enjoying those smokers, keep'em fired up, I'm loving the pics!

I'm just chuffed to have gotten a smoke ring in the electric smoker. Also happy that it didn't come out as tough as I was afraid when I pulled it out for slicing. JDave and I both need to work on our brisket slicing skills, though.

Get you a good meat slicing knife or even use an electric knife. Cut slices about pencil width and always against the grain. With all of that said, they looked on point to me!

Yeah, the cutlery wasn't quite what we would have liked. An electric knife would have been nice, but my Kershaw carving knife would have done just fine. Unfortunately, it was at my house, and we were at our parents' house.
