I also have a Traeger Pellet Grill that I smoke on. I also have a drop in natural gas grill. I am on the verge of buying another pellet grill but if I do I'll have to explain to my wife that 4 grills is not enough and I really NEED more, LOL!

Sweetness. I also love that you are basting the brisket with the pork fat from the shoulder. That's some awesome meat-on-meat action right there.

I am in a meat coma! All I've eaten today was meat. For breakfast I had a sausage biscuit. Lunch was berkshire pork chops, veal chops and lamb chops that my son brought home from work. He seasoned them and grilled them on one of my grills not in use. For dinner it was the brisket and pulled pork. I've never gone a whole day w/o eating some sort of fruit or vegetable, lol!

 decided not to do the traditional turkey and instead smoke a 5 pound beef loin (cut in half to cook quicker)

Not sure when, but sometime before the summer I intend to get a Big Green Egg. I'll let y'all know what's what once I get closer to a purchase date. I want the L I think. XL seems like overkill for most of what we'd be doing.
I thought about getting an electric smoker like Ramen (our parents just got one on his recommendation). But then I went to a Thanksgiving lunch at a local attorney's office, and they had pork loin smoked on the egg, and it was off the chain. I was reminded why I've always wanted one. Plus you can use it to grill and bake (convection style) as well. Old world style pizza FTW.

For me, I didn't want to drop that much money and I wanted something that could maintain a constant temperature. So the electric was the best choice for starting out for me. I recognize it has limits, especially regarding combustion and chemical reactions. But then regulating temperature with a charcoal grill can get really difficult at times.

JDave, not that I get any kind of kickback or any thing at all in doing this but I am going to recommend that you skip the BGE and buy a Broil King Keg (Kamado). It is not ceramic, won't crack or break. It's portable, so you can take it with you camping or tailgating. It is VERY thermally efficient, uses very little fuel. When you're done cooking on it, you close the vents to choke the fire and you can relight it next time you cook. No more wasted charcoal! I have baked breads in mine, pizzas all the time, low and slow cooks, hot and fast searing of steaks. It does EVERYTHING! Pellet grills are great as well but you're not doing pizzas on them very well and definitely not going to sear a steak on them. Most struggle to hit 400+ degrees. With that said, I do love my Traeger pellet grill, made wings on it tonight. Killer! Moist inside, crispy skin and a hint of smoke. Hard to beat. I also make home made bacon and smoked sausage and smoke those on my pellet grill since it has a smoke only setting, allows me to smoke at a low temp (140°) which is what you need to do bacon and smoked sausages. Probably the coolest thing about the BKK is that it is portable like I mentioned above but the WAY that it's portable is ingenious! It detaches from its stand and hooks up to your receiver and you take it for a ride!  It has two bottle openers on it too lol! I've owned one for three years and my other for 2. Love'em! My brother has a BGE and I cook circles around him! BGEs are a great kamado but they're not the only game in town! Broil King Keg - Fully LoadedIt comes with side shelves, a stand (or nest as the BGE folks like to call it), cast iron grate with a second upper stainless steel grate, multi tool. Great deal for what you get. A comparably equipped Egg would cost you more. Either way, you can't go wrong with a Kamado, whether it be an Egg, BKK, Primo, Kamado Joe, etc....they're all great cookers. And to think, they used to be for Chinese peasants, that was their oven and now it's big time $$$ in America!

I also didn't realize that the BGE's are ceramic and could break. Great advice RG, as usual. Now I'm thinking about one of those instead of a pellet cooker when I'm ready to drop that much on a grill.

BGE has a lifetime warranty so I'm not concerned that much about breakage.

I bought a Bradley Digital  It uses wood disks with the generator offset. Pushes one through every 20 minutes and the burnt one is pushed into the drip bowl to create steam I am kind of partial to pecan wood
